Sweet Potatoe Cornbread

Makes: 1 loaf

1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/8 tsp. allspice
1/2 c. cornmeal
1 c. sweet potatoes, cooked and mashed
4 tbsp. olive oil
1/4 c. cane sugar
2 flax eggs (or eggs)
1/2 c. sour milk (milk plus 1/2 tbsp. vinegar)

Heat oven to 375F. In a large bowl, sift together flour, baking powder, baking soda, salt and allspice. Stir in cornmeal. Add the mashed sweet potatoes, oil, sugar, eggs, and sour milk. Mix gently until “just mixed.” Spoon into a lightly oiled loaf pan and bake for 30 minutes. Test for doneness with a toothpick.
