*Vegetarian; can be made Vegan by using diary substitutes.
1 lb. asparagus
1/4 c. fresh pine nuts
4 tbsp. butter
1 tbsp. olive oil
2tbsp. lemon juice
Zest from 1 lemon
1. Steam asparagus in a steamer or simmer in a large pan until tender, about 10 minutes.
2. Melt butter and olive oil in a pan. Add the pine nuts and sauté until toasted and golden, about 1-2 minutes. Remove from heat. Add the lemon juice.
3. Drain asparagus and place in a serving dish. Drizzle pine nut mixture over the top. Top with lemon zest and serve.
